“Look at all the cars and trucks parked on the side of the street! In line for that tortilla cart?”

We were strolling back from a cute little restaurant 2 blocks from our hotel in the small city of La Ceiba. Up ahead was a long line of cars and trucks, pulled over on the street. We decided to cross the street to see what the commotion was all about.
Another 100 meters and we could see the reason behind the line-up. A small group of people were busy working at a roadside cart, cooking tortillas and an assortment of beans, meats and peppers. Workers were occupied on both sides of the cart, busily cooking, preparing and assembling food.
On the street, there were employees flagging traffic, taking orders, handling the money.
Curbside, there was a line-up of pedestrians as well. And the same system of handling orders and preparing food was proceeding.
On the side lines were people eating their take-out. Either on the sidewalks, the square across the street, or in and on the cars and small trucks, parked just beyond this temporary, Honduran, “fast-food” outlet.
In one small pick-up I counted 9 kids in the truck-bed, 6 in the cab and a few dads standing outside the vehicle. Everyone was all smiles and laughter. Enjoying a fun meal in the city, in the cooler weather of the evening.
The
simplicity of the business and the quality with a good price reminded me of a very successful burger stand an hour north of Toronto, called Weber's. I wrote about that business here.
Interestingly, a similar looking cart was preparing food in the same block, across the street not 50 meters away but we didn’t see anyone there standing in line.
There are two key points here:
- Have you developed a “system” for your operations so that you can produce your service or product so
efficiently that you can handle a large number of customers, without anyone complaining?
- Even more importantly, what are you doing so that you are attracting such a loyal fan base that people are willing to pile into their vehicles to drive to your location,
then wait patiently until they are served?
